Honey Curry Chicken Thighs

6 chicken thighs 2 T. Extra Virgin Olive Oil1/2 c. honey 1/4 c. mustard1 tsp curry powder 2 C Long grain brown rice5 C water1 pkg Frozen broccoli
combine ingredients except chicken. Remove skin and excess fat from chicken. Roll chicken in sauce and put in greased baking dish. Pour remaining sauce over chicken. Bake uncovered @ 375 for an hour.This is great with rice and broccoli. Makes 6 servings.
Meanwhile, fix your broccoli (or any veggie of your choice) the way you like it. I prefer mine slightly steamed (with a little crunch) with 2 sprays of I cant believe its not butter spray. YUMMY!!!!
