GF SF Almond Flour Chocolate Chip Cookies

Ingredients
2 1/2 cups - blanched almond flour1/2 teaspoon - baking soda1/2 teaspoon - salt1/2 cup - grapeseed oil1/3 cup - xylitol1 tablespoon - vanilla extract3/4 cup - dark chocolate (72%), chopped
Directions
1. Mix almond flour, salt, and baking soda in large bowl.
2. Mix oil, xylitol, and vanilla in a smaller bowl.
3. Combine wet and dry ingredients; mix thoroughly.
4. Chop chocolate and stir in.
5. Drop by teaspoonfuls onto parchment-covered baking sheet; makes 24 cookies. (2 cookies = 1 serving)

    I bet if you added some almond milk or milk substitute in to wet the batter more in replacement of the missing agave you would be able to get more cookies out of the mix =0) I did the same thing and replaced the agave with stevia and some almond milk. Worked well! Enjoy! - 7/23/12

    Substituted Honey for the xylitol and olive oil for the grapeseed oil. Then did a half and half measure to the dark chocolate and butterscotch. It was delicious! - 1/17/12
