24 oz. diced boneless, skinless chicken breast1 T. olive oil1 large onion chopped (about 1 c.)1 can diced tomatoes (about 1 cup)1 T. cumin1 T. corriander1 tsp. turmeric2 tsp. ginger5 cloves garlic, minced2 tsp salt1 T. lemon juice1 T. black mustard seeds1/2 tsp cinnamon1/2 tsp cayenne pepperapprox. 1/2 c. water or more to thin sauce a bit
Brown onions and garlic in oil, add spices and brown, add lemon juice, add tomatoes and chicken. Simmer until chicken is cooked. Add water if needed to thin sauce. Serve over Basmati rice (not included in calorie count).
