*Brown Rice, medium grain, 4 cup cooked *Turkey, Ground turkey, 93% lean, 2 lbs*Onion - Raw, chopped, 1 cup *Celery 1 cup chopped or 3 stalks, *Carrot - raw, chopped, or shedded 1/2cup *Fresh Garlic Minced, 3 tbsp *Spaghetti/Marinara Sauce (tomato sauce), 3 cup 1 large head of cabbage
Prep: Preheat oven to 350 degrees. Start by preparing the brown rice according to package instructions (2 cups dry rice = 4 cups cooked rice). Seperate cabbage leaves and steam - set aside with lid on, so they remain warm. Brown ground turkey. Once turkey is browned add onion, celery, carrot and garlic - heat through. Mix rice and ground turkey mixture. Lay cabbage rolls out on prep mat or cutting board. Scoop ground turkey mixture into each leaf, roll leaf (enchilda style) and place seam side down in baking pan. Once pan is full spread tomato sauce over the top. I always make a couple in a small pan for my daughter(that is allergic to tomatoes) in a bread pan with a little water. Cover the pans with foil and bake in a 350 degree oven for 1 and 1/2 to 2 hours. Time varies depending on your oven, altitude and texture preference.
