Mexican Hot Dish

3 chicken breast, bone/skinles4 tsp taco seasoning3 cups white rice3 cups water1.5 cups salsa1 cup frozen peas1 large tomato1 cup cheddar cheese, shredded
In zip lock bag toss the chicken breasts with the taco seasoning. Place on pre-heated oven safe skillet. Cook one side for 3-4 minutes, flip and put pan into pre-heated 350 oven, cook till done (10-15 min).
In LARGE deep sided skillet add water and rice, cook till rice is done. Add salsa, peas, & tomatos. Cube cooked chicken and add to rice mixture. Top off with cheese and return to oven, just long enough to melt cheese (2-3 min).
