Spicy Chicken Soup

Ingredients
3-4 good sized chicken breasts (abt 10-11oz)1/2 c. water1 can 15oz. RINSED kidney beans1 can 15oz. corn (undrained)1 can 15oz. diced tomatoes (undrained)1 can 4oz. green chilis (undrained)1 can 15oz. reduced sodium chicken broth3 Tbsp bottled minced cloves1-2 Tbsp cumin1-2 Tbsp dried cilantro1-2 Tbsp red pepper flakes1/2 Tbsp chili powder
Directions
Place chicken breasts and water in crock pot on high and cook for abt 3-4 hours until the chicken can be shredded easily. Add all other ingredients and cook for an additional 45-60 minutes.

Makes five 1 1/2 cup servings. Sodium can be reduced by using low sodium kidney beans, no salt added tomatoes and frozen corn (with added water). I make ahead and freeze individual servings.
