Peachy Bread Pudding

6 slices of multi-grain bread. (I prefer Orowheat BEST)2 Eggs2 Egg Whites1 Cup of Skim Milk1/4 cup Maple Syrup (the real stuff!)1 cup peaches, diced1/4 tsp nutmeg1 tsp cinammon1 Tbl pure vanilla
Preheat oven to 325F.
Spray an 8X8 casserole with cooking spray.
Cut bread slices into one inch chunks and add to pan.
Combine eggs, milk, maple syrup, and spices and whisk together. Pour over bread. Top with peaches (or other seasonal fruit).
Place the prepared bread pudding in a large casserole and fill the casserole with 1" of water. (Water bath).
Bake for 60 minutes or until a knife inserted comes out clean.
