3 large eggs (can use substitute)1 c. sugar1 tsp. vanilla2 tsp. baking powder3 c. flour (can use any combination of white and wheat - I use half of each)1/2 c. oilchocolate chips, raisins, chopped nuts, dried fruit, whatever sounds good to you (the stats on this one - I added a cup of semi-sweet chocolate chips)
Cream sugar into eggs and add vanilla. Mix baking powder into flour and add slowly to egg mixture. When you see it starts getting a little too dry, add oil and continue until all is mixed in well. Mix in chocolate chips, raisins, nuts, whatever sounds good to you (can even leave it plain). Shape into three two-inch wide flat loaves on a greased cookie sheet. Sprinkle cinnamon and sugar on top, if desired. Bake at 350 for 15 minutes, then cut into finger-width pieces, and bake 15 more minutes. Will make about 36.
