Ground Chicken & Brown Rice Meatloaf

Ingredients
1lb Ground Chicken1c Brown Rice1/2 c Egg Beaters3/4 c Greek Yogurt, plain1/2 c Chopped Onion1/2 c Chopped Celery1/2 c Chopped Pepper (and will work, I used roasted red peppers).1 tsp Salt1 tsp Basil1 tsp Oregano
Directions
Cook the brown rice in 2 to 2 1/2 cups of water (depending on how wet you like the rice...I used 2)

Mix the rice and all of the other ingredients in a large bowl.

Put the mixture into a loaf pan that has been coated with cooking spray.

Cook for 60 minutes at 350 (I covered it for the first 45 to keep the top from getting too dark).

Let stand 10 minutes before cutting.

Eat. Enjoy!
