Easy Veggie and Cheese Pan Fried Fritata

Ingredients
2 large eggs3/4 cup egg whites1/4 cup of chopped steamed cauliflower and broccoli mixed4 thin slices of tomato1/8 cup cheddar cheese, may use low fatFresh or Dried Parsley, Chives, and Dill to tasteSalt and Pepper to tasteAvacado sliced on top for a garnish
Directions
Spray 8 inch skillet with canola oil cooking spray. Let heat over medium heat for 1-2 minutes. Pour egg mixture into pan, start adding broccoli, cauliflower, and cheese, cover and cook for 1-2 minutes. Add sliced tomato evenly to top of mixture, sprinklle herbs on top, cover and let cook another 1-2 minutes. Flip like a pancake, cover and cook another 1-2 minutes or to desired doneness. seve hot with sliced avacado on top.
