Morning Glory Muffins

1/3 C whole wheat flour2/3 C all purpose flour1/2 C +2 T sugar1 t. baking soda 1 t. cinnamon1/8 t. salt1 C shredded carrots (about 2)1/4 C dried fruit, diced ( I used cranberries)1/4 C + 2 T. chopped walnuts1/4 C shredded coconut1/2 C crushed pineapple1 egg2 T. egg beaters1/4 C canola oil1 t. vanilla
Mix together in a large bowl:
1/3 C whole wheat flour
2/3 C all purpose flour
1/2 C +2 T sugar
1 t. baking soda
1 t. cinnamon
1/8 t. salt
Stir in:
1 C shredded carrots (about 2)
1/4 C dried fruit, diced ( I used cranberries)
1/4 C + 2 T. chopped walnuts
1/4 C shredded coconut
1/2 C crushed pineapple
Beat together, then add to mix:
1 egg
2 T. egg beaters
1/4 C canola oil
1 t. vanilla
Bake at 350 for 25 minutes
(12 regular size muffins)
