salmon loaf

Ingredients
2 c. cooked salmon or canned, flaked1/2 c. bread crumbs3 Tbsp. butter, melted1/4 tsp salt1 small onionDash of pepper2 eggs, slightly beaten1 Tbsp. parsley, minced
Directions
Remove dark skin and bones from salmon ( only if fresh) if not then just take out big bones . Combine all ingredients. Pack into a greased bread pan. Bake in a pan of hot water for 1 hour at 350 degrees.

Tuna loaf: Use tuna in place of salmon and add 1 Tbsp. chopped pimento.
