Potato and Chorizo Fritatta

Ingredients
3 Chorizo links6 Eggslarge shallot (3 tbsp)3 large potatoesolive oil (2 tbsp)
Directions
Chop shallots and sautee in cast iron skillet in oil until soft. Dice and add potatoes and cook till tender. Add diced Chorizo and cook till browned slightly. Add beaten eggs, salt and pepper. Recude heat and cook till set. Broil in oven to set the top of frittata. Turn out onto platter. Serve hot or at room temperature.
