Ingredients
400 grams eggplant, 200 grams zucchini,1 can no salt added tomatoes,1 cup Calabaro fat free ricotta, 16 grams nutritional yeastOptional- Italian seasonings, Mrs. Dash, spices of choice
Directions
Preheat oven to 400. Slice egglpant and zucchini long ways. Mix ricotta and nutritional yeast in a bowl. Open and drain can of tomatoes. In a baking dish, layer eggplant slices, tomatoes, zucchini, ricotta mix, eggplant slices, tomatoes, and ricotta mix. Add spices to taste. Bake for about 45 minutes. Makes 4 large servings or eight smaller servings.
