Poached salmon in mustard dill sauce

1 tsp olive oil2 tbsp finely chopped shallots1 1/2 cup 1% milk1/2 tsp salt1/4 tsp black pepper1 tbsp lemon juice1 1/2 tsp corn starch1/4 cup sour cream2 tbsp dried dill weed2 tbsp yellow mustard1 tbsp honey4 salmon filets
1. heat oil over medium heat in a large skillet, add shallots and saute until softened. Add milk, salt and pepper to skillet.
2. Add salmon to milk mixture once milk is hot, skin side down, poach in liquid for 10-12 minutes.
3. Remove salmon from milk mixtures. In a small bowl, mix lemon juice and corn starch and add to poaching liquid, stirring constantly for one minute. Add dill, mustard, sour cream and honey, mix together, and serve over poached salmon. Serve with brown rice, or quinoa. Serves 4.
