Onions, raw, 1 cup, chopped Olive Oil, 1 tbsp Garlic, 1 tsp Egg, fresh, 4 medium Red Ripe Tomatoes, 6 cup, chopped or slicedSalt (dash)peppersugar (dash)
Cut the onions and garlic in food processor.
Cut tomatoes (peel and remove seeds if preferred).
Cook in high heat, mixing, the onions and garlic with the olive oil, until onions are cooked (start to see some brown, not burned).
Add the tomatoes, mix and let it come to a boil.
Let cook until the tomatoes are cooked (looks like a pure), mix every so often.
Add sugar (if tomatoes are very acid), salt and pepper. Mix well.
Add the eggs, let stay for another 4-6 minutes.
Serve hot with mint and french bread.
