Sweet Breakfast Popovers

*Smart Balance Light Buttery Spread with Flax Oil, 1 tbsp Smart Balance cooking spray*Egg white, 3 serving *Milk, Fat Free, Skim, 8 oz Vanilla Extract, 3 tsp *Whole Wheat Flour, 0.5 cup Rice flour, brown, 0.5 cup Salt, .5 tsp *Splenda Brown Sugar Blend, 9 tsp
Spray 9 muffin cups or a 6-cup popover pan with cooking spray. Blend egg whites and vanilla in a bowl, Add milk, flour and salt. Beat with a wire whisk or spoon, disregarding lumps. The batter should be lumpy. Pour batter into prepared muffin cups, filing each cup evenly. Sprinkle with brown sugar. (Sprinkle cinnamon on top for the added flavor -optional) Place popovers in cold oven on the lowest rack. Turn on oven to 425 degrees. Bake for 25 minutes, until golden and puffed. Serve immediately.
