World's Best Waffles

2 cups Organic All-Purpose White Flour2 tsp Baking Powder1/2 tsp Salt2 large Egg, fresh 2 cup Silk Soy Milk 1/4 Maple Syrup 1/4 Olive Oil2 tbsp Vanilla Extract
Makes 6 Belgian Waffles
Preheat waffle iron.
Sift together the flour, baking powder and salt into a large mixing bowl. Separate the eggs and whip eggs whites in a small bowl until they form soft peaks. Careful not to overwhip. In a medium bowl, whisk together soy milk, maple syrup, olive oil, egg yolks and vanilla extract.
Combine liquid and dry ingredients in the large mixing bowl, mixing just until smooth. Fold in egg whites using a rubber spatula. Do not whisk at this point.
Pour batter into waffle iron using 1/2 cup measuring cup and cook until done.
