Red Lobster Shrimp Scampi Diet Version

Ingredients
1 lb raw shrimp peeled and devined1 Tbsp canola oil2 Tbsp garlic finely chopped1 1/2 cups white cooking wine1/2 fresh lemon juice1 Tsp Italian Seasoning Blend1/2 cup Blue Bonnet Margarine Light1 Tbsp parsley1 cup sliced mushrooms
Directions
Heat skillet and add canola oil. Do not allow the oil to smoke. Add shrimp and cook until tender and no longer translucent. Remove shrimp from pan. Cook mushrooms and remove from pan, reduce heat slightly. Add garlic and cook 2 - 3 minutes. Be careful not to brown garlic as this will produce a slightly bitter flavor. When garlic is cooked, add white wine. Squeeze juice from lemon in pan, and reduce wine by half. After it is reduced add Italian seasoning. Reduce heat to low and slowing add margarine. Add shrimp back into sauce. Add parsley and season to taste. Serve with pasta. You can also add Parmesan cheese if desired.
