Dad's Beer Battered Chicken Chunks

Directions
* 3 boneless, skinless chicken breasts (about 8 oz each)* 1 1/4 cup whole wheat flour* 2 cups Canola oil* 14 oz. Light or Ultra Light Beer
* Heat Oil in skillet to medium high heat until a drop of water causes a sizzle.
* Cut breasts into 3 servings worth of chunks -- the size is up to you, but smaller is better for crispiness and cooking time.
* Pour beer into a small bowl, and flour into another small bowl
* Dip each chunk into first the beer, then the flour. Make sure the chunk is well covered with flour
* Put the chunk into the oil, cook until crunchy and toasty brown.
