Michele's Tasty Low Fat Meatloaf

Ingredients
1 lb. Lean Ground Beef1/2 C Chopped Sweet Red Pepper1/2 Chopped Onion1 Chopped Jalepeno pepperBeaten eggs (1 whole and 1 egg white)1 tsp.Ground Cayenne Pepper1 tsp. Worcestershire sauce1 tsp. Mustard/HorseradishSalt and Pepper to taste
Directions
Chop vegetables in food processor and add to ground beef. Mix the remaining ingredients and incorprate well. Prepare a tin pie plate by poking holes all around the bottom with a corn cob pick and spray with non-fat cooking spray (oil-free). Pour the meatloaf mixture into pie pan and place it into a round cake pan just large enough that pie pan does not touch bottom of cake pan (the rim of pie pan should rest on the rim of the cake pan). Bake at 375 degrees for 25 to 35 minutes. The cake pan should catch excess grease drippings. This is guilt-free and very satisfying. Enjoy!
