South Western Egg Bake- South Beach Phase 1

Ingredients
1 c black beans, drained & rinsed1 bag frozen pepper and onion blend1 teaspoon chili powder1 teaspoon ground cumin1 teaspoon dried oregano, crumbled1 teaspoon garlic salt1/2 cup prepared salsanon-stick spray4c liquid Egg Whites2 cups shredded 2% cheddar cheese, divided
Directions
Pre-heat overn to 350*.

Cook beans and onion & pepper blend in heavy large skillet over medium heat until browned using non-stick spray, stirring frequently, about 10 minutes. Add next 4 ingredients and cook 4 minutes, stirring frequently. Stir in salsa.

Coat a baking dish with non-stock spray. Spread bean mixture evenly in bottom of dish, sprinkle with half of the cheese.

In a bowl, beat eggs well. Pour over bean mixture in baking dish. Top with remaining cheese.

Bake 25-30 minutes until golden on top and eggs are set in the middle.
