Broccoli Veggie Casserole

1 cup rice2 Tbsp. margarine1/2 cup chopped onion1 cup chopped carrots2 cups broccoli flowerets2 cloves garlic, minced or pressed1 1/2 cups chicken broth1 Tbsp. chopped parsleydash of pepper1 cup grated Cheddar cheese
1) Saute the onions in the butter until soft.
2) Add the carrots. Cook over medium heat for about 3 minutes.
3) Add broccoli, garlic, and rice. Stir to blend.
4) Add the chicken broth, bring to a boil. Cover with tight lid.
5) Cook over low to medium heat until rice is done. Add herbs.
6) With a fork, toss in the cheese. Be careful not to mash the vegetables.
7) Put the casserole in oven, broil at 350F for about 10 minutes.
* Any combination of vegetables can be used.
* Makes 6 servings.
