Carrot Cake III

Ingredients
eggs, applesauce, oil, sucanat, vanilla, flour, baking soda, baking powder, salt, cinnamon, (nutmeg, clove), carrots, walnuts
Directions
Preheat oven to 350 degrees.
Beat 4 eggs, 1 cup applesauce, 1/3 oil, 2 cups sucanat and 2 teaspoons vanilla.
Mix in 2 cups whole wheat flour, 2 teaspoons baking soda, 2 teaspoons baking powder, 1/2 teaspoon salt, 2 teaspoons cinnamon and if desired, 1/4 teaspoon nutmeg and 1/4 teaspoon clove.
Stir in 3 cups grated carrots
Fold in 1 cup walnuts or pecans.
Bake for 40-50 minutes until a clean center poke.
