Spanish Chicken with Rice

4 servings of brown rice4 cups of Diced Tomatos (1 large can)4-6 tablespoons of chopped Cilantro (depending on the person- i LOVE cilantro, so I tend to go overboard and never regret it)1-2 cups of sliced Mushroomshalf a Bell Pepper, chopped.5 cup of finely chopped Onion3 Chicken Breasts
If using a slow cooker- Id recommend to first brown the chicken breast using a fat-free spray, then placing the chicken into the slowcooker and tossing these ingredients in on top. Cooking on low for about 10 hours, adding salt and pepper to taste. Before serving, I'd tear apart the chicken with a fork or two, or slice into nice big chuncks
Its the easiest meal you could make with so much packed in flavour- cilantro is an incredible ingredient, and I'd recommend purchasing only fresh ingredients, as the taste is unbeatable.
If you'd like to make this using ground chicken, its also tasty (this is more pratical if you're trying to coax children into eating it, seeing as its also delish wrapped up in a tortilla with some cheese ontop).
Dont limit yourself to using the slowcooker- esspecially if you dont have the time to do this in the morning- you can also just toss it together in a pot or frying pan, letting it simmer for as long as possible and again, adding salt and pepper to taste.

This was delicious! I added a cup of frozen peas and another cup of mushrooms (i love mushrooms) and some extra spices, and used cereal pilaf instead of rice. I have no slow cooker, so i just let everything simmer for a couple of hours in a large skillet. the result was wonderful. :) - 9/28/09
