Chicken Salad

4 chicken thighs, baked with skins on, remove skins and shred into a bowl, add two stalks diced celery, a small onion and 1 cup or so red grapes, stir in 1 cup mayo and a Tbsp of fresh sqeezed lemon, s&p to taste
