Fresh Apple Pecan Streusel Cake

Streusel Topping:2/3 cup quick cooking or old fashioned oats1/3 cup packed brown sugar1 cup pecans, coarsley chopped3 Tbl canola or vegetable oilCake:1 cup granulated sugar1 container (6 oz.) Yoplait Greek Fat Free Honey Vanilla Yogurt2/3 cup canola oil1 tsp vanilla2 eggs1-1/2 cups all purpose flour1-1/2 cups whole wheat flour3 tsp baking powder1 tsp ground cinnamon1/2 tsp salt2 cups finely chopped, peeled apples (2 medium)
Makes 16 servings.
1. Heat oven to 350 degrees F. Spray a 13 x 9-inch pan with cooking spray. In a small bowl, mix streusal ingredients with a fork until crumbly; set aside.
2. In a large bowl, beat sugar, yogurt, oil, vanilla and eggs with electric mixer on low speed about 30 seconds or until blended. Add all remaining ingredients except apples; beat on low speed about 1 minute or until blended. Stir in apples. Batter will be stiff. Spread batter in the pan-- I put the batter in and sprayed my hands with cooking spray to pat down the dough. Sprinkle evenly with topping.
3. Bake 40 to 45 minues or until toothpick inserted in the center comes out clean. Serve with a cold glass of milk.
