Turkey Skillet Lasagna

Ingredients
1 lb. ground turkey6 oz. dry whole wheat lasagna noodles, broken into small pieces1 28-oz can Fratelli Chopped Italian Tomatoes, Herbs & Olive Oil1 Cup water1 Cup low fat, 1%, small curd cottage cheese1 Tbsp. dehydrated chopped onion1 tsp. minced garlic1/2 tsp. salt1/2 tsp. black pepper1/2 tsp. cayenne pepper
Directions
Cook turkey in a deep skillet with onion, garlic, salt, red and black pepper until no longer pink.
Drain any grease from skillet.
Add tomatoes and 1 cup of water to turkey mixture.
Bring to boil and add broken lasagna pieces.
When mixture again begins to boil, reduce heat, cover and simmer 20 minutes or until noodles are ready. (Stir occasionally to prevent sticking.)

Measure out 1-cup servings and top with 2 1/2 tablespoons of cottage cheese.

Makes approximately 6 1-cup servings.
Leftovers reheat well in microwave.
