Mixed Berry Muffins

Ingredients
1 1/4 c flour, sifted1 TBSP baking powder, sifted1/3 cup of sugarthe zest of one lemon1 1/4 c lowfat buttermilk2 tsp freshly squeezed lemon juice1/4 c vegetable oil1 cup frozen mixed berries
Directions
Sift flour and baking powder into a bowl. Add sugar and lemon rind. In a large glass measuring cup, mix oil, egg, milk and lemon juice. Add wet mixture to dry ingredients and blend until mixed. fold in berries, stirring as little as possible. Spoon into prepared muffin tin or into papers. Cook at 400-degrees for 25 minutes. Makes 12 muffins at 130 calories each.
