Easy Chicken a la King

Ingredients
2 cups shredded cooked chicken4 carrots, chopped4 stalks celery, chopped1 can cream of celery soup, 98% fat free6 oz non-fat evaporated milk1/2 oz dry sherry
Directions
Shred cooked chicken - about 2 cups.
Chop celery and carrots and microwave on high for 4 minutes, retaining some crispness.
Heat pan sprayed with cooking spray to medium low.
Add condensed soup and evaporated milk (I have also used 1% milk). Add sherry.
Add chicken and cooked vegetables.
Simmer until vegetables cook a bit more.
Add seasoning as desired - thyme and parsley work well with this dish.
Serve over rice.
