Vegetarian Chopped Liver

Ingredients
3/4 c. dried lentils3 c. water2 T vegetable oil8 walnuts, minced4-5 onions, diced4 cloves garlic, minced3 hard boiled eggs, chopped1 t. each salt and pepper
Directions
Add lentils to boiling water - simmer 30 mins. Drain lentils.
Heat oil in skillet; add onions & garlic & saute over lowheat approx. 25 mins.
Place drained lentils in mixing bowl.
Add wlnuts, onion mixture, eggs, salt & pepper. Mix well.
Food processor can be used for smoother texture.

Makes 8 1/2 cup servings.
