Smoked Cauliflower Gratin

Ingredients
1 cup quinoa1 head cauliflower1/2 cup egg whites3/4 cup breadcrumbs3/4 cup oil4 oz shredded smoked goudayour preferred herbs, to taste (I use savory, basil, whatever's on hand)1 tbs breadcrumbs
Directions
Preheat oven to 350.
Cook quinoa according to package directions
cut cauliflower into large-ish but bite-sized pieces & blanche, cool.
pour in oil a couple tablespoons at a time & heat to medium
dip cauliflower into egg and then breadcrumbs & fry, turning regularly, until brown all over. Continue with all cauliflower, adding more oil as necessary.
Place fried cauliflower in a single layer in a 9x13 baking dish. Season as desired. Spoon quinoa into spaces between, cover with shredded cheese & breadcrumbs. Bake until brown & bubbly.
Serves 8.
