Spring Tuna

Ingredients
4 4oz. tuna filets3 cups frozen or fresh peas, thawed1 cup chopped shallots1/4 cup chopped garlic1 handful fresh parsley5-6 fresh mint sprigs1 T. olive oilSalt & pepper to taste
Directions
Saute shallots and garlic in olive oil until clear. Rub tuna steaks with kosher salt and ground pepper. Preheat grill. In food processor process 1 large handful of fresh parsley and mint sprigs together. Place in bowl. Process peas until mushy and add to parsley mixture. Stir together. Grill tuna steaks, approximately 7-8 minutes each side. Add pea mixtures to shallots in hot pan. Sear pea mixture until crispy, turn and sear other side. Divide among 4 plates and top with tuna.
