Brown Rice and Mustard Greens

Mustard Greens, 450 grams Long Grain Brown Rice, 2 cup Extra Virgin Olive Oil, 1 tbsp Salt, 1 tsp Onions, raw, 1 medium (2-1/2" dia) Bay Leaves, whole, 3 Parsley flakes 1/2 tsp Crushed red pepper, 1/2 tsp
Bring 5 cups of water to a boil. Add salt, chopped onions, oil, herbs and rice and stir. Cover. Lower heat and simmer for 30 minutes, until the rice is almost tender and most of the water is absorbed. Remove the bay leaves, add the chopped mustard greens(don't stir yet) and cover. When greens have wilted, and the water is absorbed stir the greens/rice mixture and remove from the heat, allow to rest for 5 minutes, covered before serving.
Cabbage leaves, chinese cabbage or other greens can be substituted depending on your tastes.

I've been trying to expand my vegetable horizons, so I made this recipe last night. The dish was great, but I don't think mustard greens are for me. The flavor is a little too pungent. For people who like a food that really explodes on your taste buds, this might be the recipe for you! - 11/18/08
