red lentil soup

Ingredients
3 Tbs unsalted butter1/2 lg onion (about 1 cup)2 garlic cloves, minced1/2 celery stalk ( about1/4 cup)1 lb. red lentils1 tsp. ground cumin2 Tbs. long-grain white race2 1/2 quarts chicken broth, or as needed1/2 cup lemon juicesalt to tastefresh ground pepper
Directions
Melt the butter in a soup pot over med. heat and add garlic, onion, and celery. Cook until the onion is translucent, 4 to 6 min.
Reduce the heat to low, add lentils and cumin, stir while cooking for 5 min.
Add rice and 5 cups of chicken broth. Bring to a simmer and cook, stirring often to prevent scorching, until lentils dissolve and begin to look like pureed soup, 30-45 min.
Add remaining broth. Heat through. Add lemon juice, salt & pepper. makes 8 servings
