Baked BBQ Pineapple Chicken

3 Chicken leg quarters, skinless1 can diced tomatoes1 cup pineapple2 Tbsp brown sugar1.5 tsp dijon mustard1 Tbsp cider vinegar1.5 tsp worcestershire sauce1 Tbsp ginger root, minced3 cloves garlic, minced1 tsp chili powder.5 tsp cumin.5 tsp paprika
Preheat oven to 400 degrees.
Puree tomatoes in blender.
Combine pineapple, mustard, vinegar, worcestershire sauce, minced garlic and gigner, chili powder, cumin and paprika in a sauce pan. Bring to a boil and simmer, uncovered for 15 mins.
While sauce is cooking, place chicken in shallow baking dish and bake for 30 mins. Pour sauce over chicken and bake for 20 more minutes, basting after 10 mins and before serving.
