Vegetable Chowder

Ingredients
1 Yellow Onion, diced2 Yams, cubed4 small Carrots, sliced2 stalks Celery, sliced2 small Zucchini, sliced2 C. frozen corn2 T Olive Oil2 C Raw Spinach8 C. Lite Chicken BrothSalt & Pepper to taste
Directions
Saute' onion in 2T olive oil until soft, add all other vegetables except Spinach and cook for approximately 10-15 minutes. Put vegetables into a pot with the chicken broth and cook until vegetables are tender. Before serving, remove up to half of the soup and puree, return the puree to the remaining soup and add the spinach.
