Chopped Veggie Salad

Ingredients
3 large ripe tomatoes2 large cucumbers- unpeeled and scrubbed if organic- if "conventional" then peel1 small onion- red bermuda is nice1 large green bell pepper (or red- or a mixture) Juice of 1 large lemon1 teaspoon Celtic Sea Salt
Directions
Chop tomatoes, cucumbers and pepper in small pieces about the same size. Squeeze lemon, season with sea salt.

Let flavors combine for a few hours. Serve as a side dish with just about anything! Or add as a topping for hummous, or tuna.
