Bruschetta Topping

10 - 15 Roma tomatoa good handful of basil2 - 4 cloves of garlic...pending on your taste.a dash of salt and peppera light drizzle of olive oila heavy drizzle of balsamic
You want to skin the tomato's so get a pot of water boiling.
Drop a couple of tomato in the boiling water at a time, leave them in for a minute, pull them out.
Slice the tomato's in half, seed them, and pull the skin off.
Cut the tomato into tiny squares.
Mince the garlic and add to the dish.
Chop the basil and add to the dish.
Salt and pepper.
Add the olive oil and balsamic vinegar.
I go light on the oil and heavy on the vinegar...other prefer it the other way around.
Other additions of this recipe add Parmesan to the mix. I do not like the cheese in the sauce, but it is an option if you like.
This is a great dish for a get together offering a light calorie treat to snack on. You buy a thin loaf of bread, slice thin slices put them in the over an let it brown a bit, pull them out and rub them with raw garlic. Put those one a plate and add a bowl of the sauce...yummy.
The calories here are for the sauce...no bread included. I call each tomato 2 severing...so 20.
