Apple Lemon Muffin

Ingredients
1 cup flour2 tsp baking powdera pinch of salta dash of cinnamon (optional)2 tbsp Splenda Brown1 egg, beaten5 tbsp apple sauce0.5 tbsp lemon juice0.5 cups milka dash of vanilla1 med. apple, peeled and diced
Directions
*preheat oven to 425F, lightly grease muffin tin or line with papers

* sift together dry ingredients, set aside
* mix together splenda, egg, apple sauce, and lemon juice; add milk and vanilla
* add dry ingredients and mix until just moistened, being careful not to over mix; fold in apples; spoon into muffin tins
* bake 15 minutes, until golden and a toothpick inserted in middle comes out clean; cool 2-5 minutes in pan before removing to rack to cool completely

    I used whole wheat flour and had to substitute lemon extract for juice (due to what I had in the house), but I was really happy with how these turned out! Perfect for breakfast or dessert :) - 2/1/11
