Lentil Pilaf (adapted from Joshi's Holistic Detox)

Ingredients
2 tbsp olive oil1 bunch of spring / green onions, chopped2-3 cloves garlic, chopped1 cup lentils, rinsed1/2 cup brown rice, rinsed1/4 cup long grain wild rice, rinsed2 tbsp flaked or slivered almonds1/2 tsp thyme2 1/2 cups chicken stock or 1 bouillon cube & 2.5 cups boiling water
Directions
In a large saucepan, saute the onions, garlic, lentils and both rices in the olive oil until the onion is tender (4-5 min). Add the almonds, thyme and chicken stock and bring to a boil. Reduce heat to simmer covered for about 30 minutes or until the liquid is absorbed.

Makes 6 portions.
