Healthy Dirty Rice

Ingredients

1 lb Turkey Sausage1 Tbl vegetable oil1 medium green pepper1 medium yellow onion3 cloves garlic1 can pinto beans drained and rinse1 cup long grain brown rice 1 box (32 oz) chicken stock
Brown sausage links in a large pan
Cut sausage into slices and retun to pan
Add 1 tbl veggie oil, garlic, onions, and peppers, sautee untill garlic is beginning to brown and sausage is no longer pink.
Add 1 box (32 oz) of chicken stock, pinto beans and one cup of brown rice.
Bring to a boil then cover and slow simmer for 45 - 60 min or until rice is soft. *
Add parsley flakes fluff and serve.
* for faster cooking time cook rice in rice cooker with chicken broth and add to sauteed sausage veggies and pinto beans.

Looks like a great recipe, but the calorie count is wrong if you haven't included the rice and the oil. - 9/13/10

Thank you for pointing that out. I did have the rice factored into the cal count just forgot to add it to the ingredient list. You are right though, I did not include the oil. Went back to add the oil and it turns out I counted the meat 2xs so after adjustments it tuns out to be less cal than b4!
