Veg curry

Ingredients
1 cup assortment of vegetables (Peas, carrots, Cauliflower, beans, Broccoli) cubedTomatoes 2 pureedOil 1 tsp1/2 tsp cummin seed1/4 tsp turmeric1tsp corriander powdersalt to taste2 tbsp plain yogurt6 roasted cashews
Directions
Steam veggies and keep aside. Heat oil in a pan and add cumin seed. When they start spluttering, add tomato puree and cook on a medium/low heat till the oil seperates. Add corriander powder, turmeric and salt and cook for a minute. Then add the yogurt and cook for 1 more minute. Add 1/2 cup of water and the veggies. Simmer for 5 minutes. Garnish with cashew nuts and serve. Two servings
