Big Daddy B's Pancakes

2 tsp Cinnamon (optional, but preferred)1 pinch Baking Soda2 cups self-rising flour (biscuit flour)1.75 cups 2% milk2 medium eggs2 tsp Vanilla1/2 stick of salted butter1 tbls. oil for cooking
Prep aluminum pan with 1 tbsp. Crisco oil on medium gas heat.
In 1st mixing bowl stir Flour, Cinnamon & Baking Soda together with whisk.
Micro Butter to liquid.
In 2nd bowl, whisk Milk, Eggs & Vanilla thoroughly. Stir in melted Butter.
Slowly add dry mix to wet while whisking until thoroughly mixed. Let set a couple of minutes while setting up for breakfast.
Use 1/3 cup ladle to pour into pan. On 1st bubble that doesn't pop, flip and cook for another 30-45 seconds. Should be a medium to light golden brown. If dark, turn down flame, if white, let cook longer & turn up just a little.
If batter is runny, add 1/4 cup flour, if too thick, add 1/4 cup milk or water. Should pour like the syrup into pan.

Serve with your favorite topping, syrup or plain. (Doesn't need extra butter as is in the mix)
Add chocolate chips or blueberries for those not watching the carbs.
Substitutions of fat free milk, margarine & egg substitute reduce the quality of the taste, although reduces fat & cholesterol.
Yields about 12 pancakes
