Eating For Life Denver Omelet

Ingredients
1 whole egg3 egg whites1 Tbsp skim milk1/4 tsp ground black pepper1/4 green bell pepper, diced1/4 red bell pepper, diced1 slice onion, chopped1/4 cup lean ham, diced2 Tbsp reduced-fat cheddar cheese, shredded1 slice whole wheat bread
Directions
1. Lightly coat nonstick skillet with cooking spray and place over medium low heat.
2. In a small mixing bowl, whisk togehter egg, egg whites, milk and black pepper. Pour into skillet and cover. Cook for about 4 minutes until eggs are set but still moist.
3. Spoon bell peppers, onions, and ham on half of the omelet. Fold omelet over filling and sprinkle with cheese. Cover and cook until filling is heated through and cheese is melted (2 to 5 minutes).
4. Toast a slice of whole wheat bread and serve with omelet.
