Light Peach Pie

Ingredients
6 medium peaches peeled and thinly sliced1 Tablespoon lemon juice6 Tablespoons sugar1/4 cup splenda1/4 cup white all-purpose flour1/4 teaspoon ground cinnamon1 Tablespoon land o lakes light butterCRUST:1 cup white all-purpose flour1/2 teaspoon salt6 Tablespoons crisco shortening2 1/2 Tablespoons cold water
Directions
mix peaches and lemon juice, set aside. mix sugar, splenda, flour and cinnamon together. Pour over peaches and stir to coat. Pour into pastry lined 8" pie plate. Dot with butter, cover with pastry.
TO MAKE PASTRY:
Mix flour and salt, cut in shortening, add water and mix until flour is coated, divide in 2 equal pieces. roll out on well floured surface.
Bake @ 425° for 35-45 minutes
makes 1- 8" pie (serving is 1/8 of pie)
