courgette raita

Ingredients
150gm pot low fat yoghurt1 Tablespoon chopped mint2 small or 1 medium courgette (zucchini)
Directions
Cut the courgettes in half and scoop out/discard the seeds. Grate the courgette. Bring a pan of hot water to a rapid boil and drop in the courgette shards to boil rapidly about 10 seconds.
Drain the courgettes and when cool enough squeeze out the water.
beat the yoghurt until smooth then stir in the mint and courgettes.

Will easily serve 4 as a side dish.
