Ingredients
CANOLA OIL COOKING SPRAY1/4 CUP ALL PURPOSE FLOUR1/2 CUP EGG SUBSTITUTE1/2 CUP BUITONI FINELY SHREDDED PARMESAN CHEESE1 CUP PROGRESSO DRY ITALIAN BREAD CRUMBS1 LB BONELESS, SKINLESS CHICKEN TENDERS1TBSP ITALIAN SEASONING1 TSP GARLIC POWDER
Directions
1. PREHEAT OVEN TO 450 DEGREES F. COAT BAKING SHEET WITH COOKING SPRAY.
2. PLACE FLOUR IN A SHALLOW DISH. PLACE EGG SUBSTITUTE IN ANOTHER DISH. COMBINE PARMESAN AND BREADCRUMBS IN ANOTHER SHALLOW DISH.TOSS TENDERS WITH ITALIAN SEASONING AND GARLIC IN ANOTHER BOWL. COAT EACH TENDER IN FLOUR, SHAKING OFF EXCESS. DIP IN EGG AND LET ANY EXCESS DRIP OFF. THEN ROLL EACH TENDER IN THE BREADCRUMB MIXTURE. PLACE THE TENDERS IN THE PREPARED PAN. GENEROUSLY COAT THE TOP OF EACH TENDER WITH COOKING SPRAY.
3. BAKE FOR 10 MINUTES. TURN EACH TENDER OVER AND COAT WITH COOKING SPRAY. CONTINUE BAKING UNTIL THE OUTSIDE IS CRISP AND THE TENDERS ARE COOKED THROUGH, ABOUT 10 MINUTES MORE.

THESE CAN BE SERVED WITH MARINARA SAUCE, BUT YOU WILL HAVE TO ADD THE NUTRITION INFO.

    My family likes these. Sometimes I use whole chicken breast; I'll cut off the tender, then slice the remaining breast into "tender-sized" chicken. Saves money at the store. - 7/15/13
