Couscous Salad

Ingredients

1 cup dry couscous1 cup chicken broth2 Tbsp extra-virgin olive oil1 large tomato, chopped1- 2.25 can sliced black olives, drained1- 14 oz. can artichoke hearts, chopped 1 Tbsp Weber Zesty Lemon Seasoning (or use lemon pepper)juice of one lemonsalt and pepper to taste
1. Bring chicken broth to a boil in a saucepan. Add dry couscous, cover and remove from heat. Let stand 5 minutes.
2. Add olive oil and stir. Transfer to bowl.
3. Add tomato, artichoke hearts, and black olives, lemon seasoning and lemon juice. Mix.
4. Season with salt and pepper to taste.
5. Serve warm or cold. Makes 6 1-cup servings.
