Ingredients
2 chicken breast (boneless, skinless)1 can enchilada sauce2 cups shredded low fat cheesecorn tortillas
Directions
boil chicken until cooked thoroughly. heat tortillas in microwave then dip in enchilada sauce. Put tortillas in pan then fill with chicken and cheese. Roll. Cover all enchildas with remaining chicken and cheese. Garnish with black olives if desired. Serves 8-10
